There's nothing like biting into a perfectly cooked Oscar Style Steak. With rich toppings and elegant presentation, this is a dish that is truly in a class of its own. This beef steak, topped with a combination of seafood, vegetables, and flavorful sauces, is believed to have gotten its name in 1897 from King Oscar II, of both Sweden and Norway, when a chef prepared him a dish composed of his three favorite ingredients. The King was delighted, and the Oscar Style Steak remains a classic to this day.
Key Components of Oscar Style Steak
The delicious toppings are what make this steak so mouthwateringly delicious. Key components include:
-
Beef: A cut of seared beef.
-
Crab Meat: Usually lump crab, either cooked or lightly seasoned.
-
Asparagus: Steamed or grilled to provide a fresh crunch to perfectly complement the richer toppings.
-
Sauces: A creamy, buttery Hollandaise sauce is drizzled over the top.
-
Optional Extras: Thin slices of truffle, lemon wedges, or even capers to deepen the flavors.
Choosing the Right Cut of Beef
You'll want to choose the right cut of beef to get a tender, flavorful Oscar Style steak. Consider the following types:
-
Filet Mignon: This is a lean and tender cut, with a mild flavor that will melt in your mouth.
-
Ribeye: This boneless cut is extremely tender, with more marbling than other cuts. Its buttery flavor has earned it the title of "King of Steaks".
-
New York Strip: This cut is well-marbled and flavorful, with a firmer texture than other cuts.
Preparing Oscar Style Steak
Preparing the Oscar Style Steak is quite arguably the most important part of the process. You will need to following ingredients:
-
Steak
-
Fresh Asparagus
-
Crabmeat
-
1/4 cup of all-purpose flour
-
1/2 teaspoon of salt
-
1/2 teaspoon of pepper
-
2 teaspoons of butter
-
2 teaspoons of cooking oil
In a large dish, mix the flour, salt, and pepper. Flour all sides of the steak, and melt the butter in a pan with oil. Gently place the steak in the pan and cook it about 5 minutes per side, or to your desired temperature. Keep in mind the following:
-
Rare – 120°F. Rare steak has a cool-to-warm red center and a soft, tender texture.
-
Medium Rare -130°F, A dark pink center.
-
Medium – 140°F, A dark pink center and browned edges.
-
Medium Well -150°F - pink inside with no visible red.
-
Well Done – 160°+F - no pink in the middle.
To prepare the Hollandaise sauce, you'll need the following:
-
Egg Yolks – 3 eggs
-
Lemon Juice – 1 tablespoon
-
Dijon – 1 teaspoon
-
Salt – 1/4 teaspoon
-
Cayenne Pepper – just a pinch will do!
-
Butter- 1/2 cup of melted butter.
Melt the butter carefully in a small saucepan before combining the egg yolks, lemon juice, Dijon, salt, and cayenne pepper into a blender for 5 seconds. Slowly add the butter while still in the blender.
Now, it is time to steam the asparagus and heat the crab. Finally, put 4 spears of asparagus across each steak, and place some crab on top. Top off the dish with sauce and some freshly ground pepper.
