At Billy’s Stone Crabs, we stay true to our word in saying we provide Hollywood with the freshest seafood prepared at the highest caliber. A few of our popular items are seasonal, such as the Florida Lobster and the Alaskan King Crabs, and of course we offer all-you-can-eat Stone Crabs when their populations are safely at their peak. However, the Atlantic Ocean and the Gulf of Mexico never tells our fishermen what the sea will bestow upon them on any given day, be it mahi-mahi, tuna, snapper, grouper, or any other choice catch you may find on a plate, which is why our Fresh Fish of the Day menu has so many fantastic options!
If you don’t think the ocean’s freshest catch is enough meat for you, a few of our Fresh Fish of the Day menu items come topped with additional seafood for the veteran fish eater. You could try your choice of fish prepared in our Bretone-style, sauteed with mushrooms, shallots, lemon butter, and white wine, and served with crab meat and jumbo shrimp, or for a slightly richer flavor, our Oscar style fish, served with lump crab meat, asparagus, and topped with a creamy Hollandaise sauce. In a nod to our local Florida cuisine, we offer the Key West style Fish of the Day lightly sauteed in butter and a white wine sauce, then topped with Jumbo Shrimp, crab meat and sliced avocados. To properly experience the seafood selection in this dish, we recommend a dry white wine.
In keeping with our locally influenced cuisine, we have a more exotic Caribbean-style preparation that has your Fresh Fish of the Day either pan seared or grilled to your liking, and topped with fresh tropical fruits like pineapple, papaya, and mangoes, over a bed of baby spinach. We drizzle a little olive oil and fresh lemon over the top, sprinkle with sliced roasted almonds, and when paired with a nice cocktail, you are in for a treat directly from the islands. To head across the Atlantic like we did with our last post, the flavors of our Mediterranean-style Fish of the Day is enough to challenge our pasta dishes for the lover of Neapolitan seafood. We pan sear or grill the fish, lay it on a bed of baby arugula greens, and top it with a finely chopped mixture of tomato, kalamata olives, red onions, and basil. A drizzle of extra virgin olive oil and a squeeze of lemon finalize the dish. And what would a fine dining seafood establishment be without a dish of crusted fish? We offer the expertly prepared Macadamia Encrusted Fresh Fish of the Day which is coated with a mixture of chopped macadamia nuts, asiago cheese, and breadcrumbs before being broiled to perfection and served over steaming sauteed vegetables. After a little garnish of sesame seeds, this dish is ready to be enjoyed. The colors, aromas, and flavors of the Macadamia Encrusted fish are not to be missed. It’s a true delight to the senses!
